week one: eat healthy

one of our goals being back in california is to continue eating simply and to bring home the swedish commitment to "ecologisk." plus, like much of our fellow california citizens we find ourselves needing to re-pritoritze and find creative and healthful means of living thriftly and simply (or on more blatant terms to live within a budget now that we're no longer a dual-income family). but i'm excited about these changes and started today with an inspired but not overly ambitious menu. (i'm totally inspired, by the way, by jasmine's food challenge and her tasty and gorgeous farmer's market menus). this week i went for simple inspriation in the "summer" section of martha's everyday food (EF) and some trader joe's standbys but here's how the menu goes:

monday: harvest grains (trader joe's) with dried apricots, toasted almonds and parsley drizzled with my fave blood orange olive oil served with "grilled" shrimp (tested out my panini press foreman-grill style for this one with thumbs up results). picture left--and very tasty!

tuesday: rosemary & lemon grilled chicken (cut whole organic chicken from tj's--recipe EF) with leftover harvest grains

wednesday: zuchinni and chicken salad (EF--using leftover chicken from tues.)

thursday: watercress and endive grilled peach salad (EF) with fish (michael's pick--again, using our panini press as grill)

in the pantry on standby: fresh whole wheat pizza dough, whole wheat penne, heirloom tomatoes, fresh basil (newly potted on the patio) and boccolini mozarella
